三聖村 in Tuen Mun is a popular location to have seafood.  One of the reasons, is that you get to pick your own seafood, before taking it to the restaurant to be cooked.  It doesn't get any fresher than that!  We started off at 關財記 to choose our ingredients before heading over to our restaurant.  The razor clams were stir fried in a hot wok with black bean sauce, garlic, onions and capsicum.  Black bean sauce is made from fermented, salt-preserved soya beans. It is a savory flavour that works well with the sweet clam meat.

Best consumed … with a bowl of steamed rice to soak up the sauce~
